Apple and Sweet Potato Casserole

Recipe Description:

This is a healthy and delicious recipe that is perfect for the fall holidays when the harvest from the fruit trees and nuts become available.

Main Ingredients:

  • 3 cups Sweet Potatoes – mashed.
  • 3 Eggs – lightly beaten.
  • 1 1/4 cups Brown Sugar.
  • 3 tablespoons Cinnamon – ground.
  • 1 1/2 teaspoons Vanilla Extract.
  • 3/4 cup Milk.
  • 1/2 cup melted Butter.
  • 2 cups Apples – peeled and chopped.

Topping (optional):

  • 1 1/2 cups Pecans (may substitute Walnuts) – chopped.
  • 1/2 cup Brown Sugar.
  • 1/2 cup Flour.
  • 1/2 cup melted Butter.
  • 1 tablespoon Cinnamon – ground.
  • 1 teaspoon Nutmeg (or may substitute Allspice) – ground.

Preparation:

  1. Combine the first 7 ingredients (no Apples) and blend them thoroughly. Then add the chopped Apple pieces and mix evenly. Next, spread the mixture into a buttered 2-3 quart casserole dish.
  2. If using the topping, mix the nuts together with the remaining ingredients and spices. Then sprinkle evenly over top of the casserole mixture in the dish.
  3. Bake at 350° for 30-40 minutes, until hot and browned – Remove and allow cooling to desired temperature.
  4. May be served hot-warm as a side dish or warm-cold as a separate appetizer and even a dessert.
